The inserted picture shows the traditional sun-drying method for fish in Bangladesh in which fish are exposed to sun for a period of 3-7 days depending on season (temperature) as well as type and size of fish; “knife fish”, “Bombay duck loittya” and Chinese pomfret (Rupchanda) are among the most common fish for sun-drying. In coastal areas, fish are sun-dried from mid-October to mid-April.
Fish preservation turns necessary when significant quantity of fresh fish caught everyday remains unsold for variety of reasons including shortage of customers, transportation problems and others. As a result winter is considered to be the peak season for drying fish.
