The photo shows female fish which are prepared before slaughtering. A female when slaughters measures about 1.5 meter in length and weighs about 8 kg. Caviar represents about 20% of a female weight. Considering the high value of caviar, the meat of males and spent females \u2013although very good- is considered a byproduct to caviar. Usually each farm has its own slaughtering plant for processing and packing of caviar and meat.<\/span><\/p>\n<p><strong>Note: <\/strong>We decided not to watermark the photos in order not to upset its clarity.
