Common snook (Centropomus undecimalis) are also known as robalo, linesiders, sergeant fish as well as soap fish. In the past, although the species was popular as a game fish, it was not appreciated by consumers due to its unpleasant soapy taste when cooked with its skin intact on even when the skin was partially attached to the fillets. Once the fillet has been cleaned, the fish is considered an excellent for consumption. This may explain why in most fish displays, common snook is sold in fillets.<\/span><\/p>\n
